mojito madness

this is my #1 drink recipe. i make it at the beach each time i go, and they go down oh so easy.

in the bahamas, we’re lucky enough to get cuban rum, which is illegal to buy in the US. it’s on a different level from bacardi and is the best there is!

these mojitos are delicious, sweet, minty, and quite the treat! they’re a bit labor intensive, but it is a labor of love.

bacardi, or any other light rum, will work, but i keep this recipe strictly to the islands where the contraband flows.

Cuban Rum and Mojito

makes 6

ingredients

  • 3 c. (packed) fresh mint leaves
  • 9 Tbsp. sugar
  • 1 1/2 c. light rum
  • 1/2 c. fresh lime juice
  • 6 c. club soda
  • 6 lime wedges

directions

reserve 6 mint leaves for garnish. place the remaining mint

into a medium bowl. add the sugar. mash the sugar into the mint with a wooden spoon to release the oils and juices. mash until the mint is bruised and aromatic.

Mashing Sugar and Mint

add the rum and lime juice to the bowl. stir until the sugar is dissolved.

Stirring in Lime Juice and Rum

strain the mixture into a pitcher. (i press it down hard to make sure i get it all out). refrigerate. discard the mint leaves.

fill 6 glasses with ice. add the club soda to the pitcher. pour the mixture over ice. add reserved mint and lime wedges for garnish to each glass.
