cauliflower rice

in keeping with the paleo diet of february, i tried out cauliflower ‘rice’ to see how it was as a substitute. it was great! a lot easier than cooking rice, in my opinion. while it can’t be used to soak up liquids in dishes like jambalaya or soups, it’s great as an accompaniment to curries or other dishes that are saucy.

here’s an easy way to make it!


cauliflower ‘rice’

serves 4


  • 1/2 head of cauliflower, leaves and stem removed  & broken into small florets
  • 1 Tbsp. olive oil or coconut oil (melted)
  • salt to taste


preheat an oven to 400F and line and large baking sheet with foil.

add a few handfuls of the cauliflower to a food processor and pulse until the cauliflower is evenly chopped and has a similar consistency to rice. you don’t want them too pulverized. do this in batches.

add the processed cauliflower to the baking sheet. drizzle with olive oil and sprinkle with some salt. using your hands or a spoon, toss it all together. spread it out on the baking sheet in an even layer.

bake for 6 or 7 minutes, remove from the oven and toss again so it gets evenly cooked.

place back in the oven and bake again for another 5 to 7 minutes. you don’t want it to brown, just cook through.

note: you can process the entire head of cauliflower and save what you can’t fit on the baking sheet in ziplock baggies in the freezer for later use.
