you don’t need a fire pit for these guys, but it would make for a great Thanksgiving fireside treat! these decadent chocolate chip cookie s’mores are delicious and fun!
if you’ve never been a fan on graham crackers, but love chocolate-on-chocolate, this is for you!
original chocolate chip cookie recipe from ‘handle the heat,’ and s’more idea came from ‘cooking classy.’ you could always just make tollhouse tear-n-bake cookies from pre-made dough for a quicker result.
chocolate chip cookie s’mores
makes 16 cookies & 8 s’mores
- 1 c. plus 2 Tbsp. all-purpose flour
- 1/4 tsp. baking soda
- 1/4 tsp. baking powder
- 1/2 tsp. salt
- 1 stick (4 oz) unsalted butter, at room temperature
- 1/4 c, plus 2 Tbsp. granulated sugar
- 1/4 c. plus 2 Tbsp. packed brown sugar
- 1/2 tsp. vanilla
- 1 large egg
- 1 c. semi sweet chocolate chips
- 12 oz. chocolate chips of your choice
- 16 marshmallows
- sticks or skewers, for toasting marshmallows
preheat oven to 350F. line baking sheets with parchment paper.
in a medium bowl combine the flour, baking soda and salt.
in large bowl, beat the butter, granulated sugar and brown sugar until creamy, about 2 minutes. add the egg and vanilla, beating well to combine. slowly beat in the flour mixture. stir in the chocolate chips. scoop 1 1/2 tablespoon-sized balls and place onto prepared baking sheets.
bake for 9 to 11 minutes, or until golden brown. allow to cool for 2 minutes before removing to wire racks to cool completely.
melt 12 oz chocolate heat in a microwave on 50% power in microwave in 30 second increments, stirring between until melted and smooth.
spread melted chocolate over the bottom side of half of the cookies.
toast marshmallows over a fire pit or over the stove burner rotating occasionally until golden brown (if using the stove burner be very careful that the marshmallows don’t touch the burner).
place 2 marshmallows over chocolate covered cookies then top with another cookie and serve immediately.
