artichoke dip

if you live in the south and anywhere near a publix, then disregard this post because their deli makes the best. it’s one of my favorite snacks when i cross the mason-dixon line. if you are no so lucky, like myself, and have to make it from scratch, this is a great, easy recipe!

sunday snack for a group (or one), football party, potluck, you name it. mix it all together, bake & serve.

artichoke dip

serves a crowd


  • 2 cans artichoke hearts, drained and chopped
  • 1 c. light mayo
  • 1.5 c. shredded mozzarella cheese
  • 1 c. grated parmesan cheese
  • salt & pepper


preheat oven to 350F degrees.

mix the first four ingredients in a large bowl. season with salt & pepper.

pour mixture into a casserole dish. bake for 35 minutes, or until golden brown and bubbly.

serve hot with pita chips or bread.
