this is a random, sir-mix-a-lot meal that i threw together with what i had in the fridge and freezer. the veggies i used can be substituted for whatever you have (asparagus, peas, carrots, etc.).
this is simple, (fairly) healthy and pretty damn easy.
for seasoning, i use adobo, or season-all. i like adding paprika, too, but it’s up to you what you want to use for this!
chicken & veggie carbonara
- 2 chicken breasts
- 1 c. broccoli florets
- 1 c. cauliflower florets
- 2 eggs (one egg and one egg yolk)
- 1 tbsp butter
- 1/4 c. parmesan
- salt & pepper
- your favorite seasoning
season chicken with salt, pepper, and your favorite seasoning.
in a skillet, heat some oil or butter and cook the chicken as desired. i like it slightly crispy and browned. note: make sure the chicken is cooked through.
in a separate pan, melt 1 Tbsp. butter over medium heat and add veggies. season with salt, pepper, and your favorite seasoning. stirring occasionally, cook the veggies until lightly browned and tender. (alternative is to cook veggies in the same pan as the chicken!)
meanwhile, bring salted water to boil and add pasta. cook as directed. drain, put back in the pot, and add 1 Tbsp. butter.
beat one egg and one egg yolk in a small bowl. add parmesan. add to pasta and stir until pasta is coated.
add the veggies to the pasta & toss.
plate the pasta with veggies and top with chicken. sprinkle with parmesan, if desired.
