sometimes salads bore me to death. lettuce. tomato. cucumber. caesar. so many ingredients…
it can be difficult to get creative. especially with a side salad.
on saturday, i went out to dinner and ordered an heirloom tomato salad that made me a very happy person. it was paired with thinly sliced radishes and garnished with a sheep’s milk cheese. it wasn’t one of those entree-size salads that are big enough for a family. it was small, packed with flavor, and perfect!
this is my play on this salad: an heirloom tomato salad with avocado and manchego cheese.
heirloom tomato salad with avocado and manchego cheese
- 1 large heirloom tomato, thinly sliced
- 1 avocado, sliced
- manchego cheese
- olive oil
- balsamic vinegar
place a few slices of the tomato in the bottom of a bowl. season with salt & pepper. place some avocado slices on top. season with salt & pepper. shave thin slices of manchego on top. add another layer of each & repeat seasoning.
[the salt & pepper will bring out the flavors of the tomatoes, but don’t overdo it!]
drizzle with olive oil and a balsamic vinegar. just a touch to give it some flavor. and serve!
