greek revival

with summer at our door, we have so much to look forward to: beach vacations, lazy pool days, sandals.

one thing we also have come to expect is sweltering heat. one way to beat the heat is a fresh, light, healthy salad.

my family’s signature, go-to salad is none other than the traditional greek salad as found in athens, greece. this means NO LETTUCE! (gasp!)

greek salad

serves 4

ingredients

  • 1 cucumber, peeled
  • 1 large tomato
  • 1/2 green pepper
  • 1 red onion
  • jar of kalamata olives
  • feta cheese (buy the kind that sold as a block of cheese in liquid)
  • 1/4 c. olive oil
  • 3 Tbsp red wine vinegar
  • 2 tsp. oregano
  • s&P

directions

chop the cucumber, tomato, and green pepper into similar, chunky pieces about 1/2 inch wide.

slice the red onion into about 10 very thin slices. you’ll only need a very little bit of the onion.

slice off two 1/2 inch thick slices of feta cheese. the more, the better.

top with a handful of olives.

season with salt & pepper and oregano. drizzle the olive oil and red wine vinegar over the salad.

let it sit for about 10 – 15 minutes before serving to let all the flavors mix and set.
