breakfast for dinner

the egg is one of the most versatile ingredients out there. it’s also one of the cheapest, making it one of the best on a budget.

for a quick, simple, cheap dinner, i got reacquainted with the egg. to make it more dinner-friendly, i opted for pan-fried polenta instead of bread.

i’ll be the first to admit that this isn’t the most healthy meal, but it’s hearty, interesting, and easy.


fried eggs over pan-seared polenta with zucchini, cauliflower, and feta

serves one


  • 2 eggs
  • 1 small zucchini, 1/2 inch slices
  • 1 head of cauliflower
  • 3 slices of bacon, diced
  • 2 slices of pre-made, ready-to-cook polenta
  • 2 Tbsp. feta cheese
  • 4 Tbsp. butter
  • 2 Tbsp. olive oil
  • cumin
  • s&p
  • parmesan, optional
roast cauliflower & zucchini: preheat the oven to 400F degrees. separate the head of cauliflower into bite-size florets. throw the florets and sliced zucchini into a deeper baking dish. drizzle with olive oil and season with a pinch of cumin, salt, and pepper. roast in the oven for 30 to 35 minutes. stir from time to time.
eggs & polenta: toss the diced bacon into a sauté pan on medium heat. let it cook for about 5 to 7 minutes, or until crispy. remove the bacon from the pan and add to the veggie roasting pan to keep warm, leaving the bacon fat in the pan.

add a tablespoon of butter to the pan. add the two slices of polenta. cook for 7 minutes per side (depending on thickness), or until golden and the edges are crispy. set aside.
if necessary, add another tablespoon of butter. crack in two eggs. season with salt and pepper. cook the eggs on top by spooning the hot liquid and butter in the pan over the eggs. cook until the whites are cooked through and the yolk in slightly firm.

finished plate:  place the polenta on a plate and place the eggs on top. spoon the zucchini and bacon over the the eggs. sprinkle with feta cheese. place the cauliflower next to the eggs and polenta. sprinkle with parmesan, if you want.
