with winter creepin’ around the corner, this means (for me) lotsa bacon & veggies… because, why not? don’t veggies cancel out the fat in bacon?
it’s a theory. not proven, but i will do lots of scientific test.
on one such occasion, i opted for a classic combination of bacon, brussels sprouts (gasp!), & onions on top a bed of spaghetti.
super fast, super yummy, and will turn brussels sprouts haters into lovers. or at least admirers.
brussels sprouts & bacon pasta
- 1/4 medium onion, diced
- 4 pieces of bacon, diced
- bag of brussels sprouts, the first layer of leaves peeled back
- 1 Tbsp. butter
- 1/4 c. white wine
bring a pot of salted water to boil and add the spaghetti and cook according to directions on the package. drain.
meanwhile, steam the brussels sprouts on the stove — or in the microwave-safe bag in the microwave (if possible). i buy the prepackage, cleaned sprouts that you just steam in the bag. allow them to cool slightly before you halve the brussels sprouts lengthwise.
in medium pot, add the bacon and cook until it begins to crisp up (3 min). keep the bacon fat in the pot. add 1 Tbsp. butter and let it melt. add the onion and cook until translucent. add the halved brussels sprouts and salt and pepper. saute until the veggies start to brown (10 mins). add the wine to de-glaze the pan and let the alcohol cook off (2 mins). add the pasta and a heavy dose of parmesan to the pot and mix it all around. serve with more parm!
