while chicken salad is always delicious on multi-grain toast, i’m a big fan of toasted or warm sandwiches.
after making the tarragon chicken salad, i decided to make a late night snack: chicken salad melt.
chicken salad melt
- 1 c. your favorite chicken salad
- 1 english muffin
- 2 slices of provolone or cheddar cheese
- few slices of avocado
- few slices of tomato
- handful of lettuce
preheat the oven to 350 degrees.
place a 1/2 cup of chicken salad on each side of english muffin. top with cheese & place on a baking sheet.
bake in your oven or toaster oven for 5 mins, or until the cheese is melted and bubbling.
top each side with avocado, tomato, s&p, and lettuce.
enjoy a quick & yummy snack!
