fried comfort

living in DC has its perks: great public transportation, awesome museums, beautiful monuments.

it also has its drawbacks: no Chick-fil-a and people like Sarah Palin.

seriously… there are 2 Chick-fil-a’s around DC. sad, sad day. therefore, i had to test out some “fried” chicken recipes so i could fill this void.

i landed on this one which was surprisingly crispy & flavorful: pan-fried chicken.


pan-fried chicken

serves 2


  • 2 boneless, skinless chicken thighs (or breasts), cut into easy-to-eat strips
  • 2 c. flour
  • 2 Tbsp. cajun seasoning
  • 1 egg
  • 1 tsp. milk
  • s&p


in one bowl, add flour and cajun seasoning and stir until mixed well (add more seasoning if you like it a bit spicier). in another bowl, add egg and milk and beat until mixed.

take the chicken pieces and season with salt & pepper.

place the chicken in the egg wash. remove and place chicken in the flour. coat well. shake off excess.

heat 2 Tbsp. oil in a frying pan. place chicken in the oil and cook all the way through. flip once. let chicken get browned and crispy.

always cut into chicken to test readiness. NO PINK LEFT!

serve with mashed potatoes & roasted veggies!

note: if you want to re-heat the chicken, use an oven or toaster oven – not the microwave.
