my favorite red meat is lamb. hands down. every time.

possibly my favorite meat period.

my family only has to mention one word to make me stay for dinner: lamb.

anyways, my dad’s been feeling sorry for himself being sick, so he requested roast lamb for dinner (wish granted). so, i started it while my mom was busy. she’s always cooked it for me, so it was my turn to take a stab at it and hopefully not mess it up.

i followed directions…. and it was delicious!!

so here is the easy (but not quick) recipe….


roast leg of lamb


  • leg of lamb (bone in or not)
  • olive oil
  • rosemary, chopped fine or dried
  • oregano, chopped fine or dried
  • cumin
  • S&P


preheat the oven to 425 degrees.

rinse & pat dry the lamb. rub it with olive oil and season with s&p, rosemary, oregano & cumin. [it is all just according to your taste & eye. don’t be modest on the seasonings because lamb can handle it.]

place the leg of lamb in a shallow roasting pan on a rack. roast for 15 minutes.

reduce the temperature to 350 degrees. roast the lamb for 15 minutes per pound & until the thickest part has reached 155 degrees internally (pink in the middle). [ours was 5.8 lbs so we roasted it for 1:30]

remove from the oven, loosely cover with foil & let it rest for 10 mins.

serve with some delicious roast potatoes & asparagus.
