who doesn’t love comfort food? especially on a sunday night.

i’m currently in NYC and thought i’d give my boyfriend’s credit card a break and cook dinner. i gave him a couple options, but this one made his eyes light up!

carbonara pasta

his roommate is dating an italian guy, antonio, so there was extra pressure to get this right! while we were cooking i got a series of questions  as to how i planned to execute the recipe. much to my surprise, i got the thumbs up from antonio! he even said he wished they were eating in! success!!

so here you go… italian-approved carbonara!



  • 4 rashers bacon
  • 1/3 c. cream
  • 1/4 tsp paprika
  • 1 egg
  • 1 egg yolk
  • 1/2 c. grated parmesan cheese
  • 2 Tbsp softened butter (optional)
  • 250g fettucine or linguine
cut bacon in strips and cook over low heat until crisp. drain excess fat, leaving about 2 Tbsp in pan.
add cream and paprika and stir till combined.
place egg, egg yolk and parmesan in a bowl, and beat until combined.
cook pasta. drain, and toss with butter.
add bacon-cream mixture and toss till combined.
add egg mixture and toss. season with salt and pepper and extra parmesan if desired.


enjoy! we did! no leftovers!
