not your momma’s salad

but it is my momma’s salad! i had this salad for the first time in france with my family a couple years ago. my mom is always full of recipe surprises!

not only is this salad easy, but it’s seemingly fancy and will impress everyone! i served this at my boyfriend’s BBQ and there was none left! the boys actually wanted more!

it’s a great side dish for a heavy meat & potatoes meal. i often have it by itself… all by myself! sometimes you just need something fresh & different. i do love the caesars and classic salads, but some days are special!

so this is my gift to you!

pear, avo & blue cheese salad

ingredients

  • 1/2 bag of both arugula and watercress (i often do only arugula to make life easier)
  • 1/2 container of crumbled blue cheese
  • 2 pears, peeled & diced
  • 1 avocado, diced
  • 1/4 cup malt vinegar
  • 1/4 cup olive oil
  • 2 tsp. brown sugar
  • 1 shallot, finely diced
  • s & p

directions

combine first four ingredients in a large salad bowl.

combine vinegar, sugar, oil, shallot and S&P. whisk.

pour over salad.

note: salad quantities are suggestions! if you life more blue cheese, go for it! i love tons of avo!
