as mentioned before in my previous post, i love easy meals! when they’re delicious & cheap & easy…. it’s a dream come true!
this soup i had over the weekend while at home at my parent’s house. my mom and i bond over the common love for food and cooking!
senior year of high school, she decided that i was not going to just come home early every day and watch tv. so, my friend lenora and i started cooking lessons and my house with my mom. each week was a different genre: desserts, pasta sauces, etc. it really got my culinary juices flowing! since then, i’ve been an avid food blog follower, food network viewer, and cookbook collector!
so, in honor of my mom’s cooking lessons, here is a soup she introduced to me this past weekend: countdown carrot soup! are you ready for this?… you DON’T even need a pot! it’s all in the microwave!!
countdown…… carrot soup!
- 1/2 stick butter
- 6 medium carrots, peeled & chopped
- 3 cups chicken broth
- 1/2 cup cream
- crumbled blue cheese (optional
place butter in large (microwave-safe!!!) bowl. microwave on high for 1 minute until melted.
add carrots, mix with butter, cover and microwave on high for 6 minutes.
add stock, cover and microwave on high for 6 minutes.
allow to cool slightly, then blend until smooth in a blender, food processor or with an immersion blender.
add cream and S&P, if needed, (& blue cheese if desired), then reheat.
note: very good to make ahead and serve later! just add the cream, cover & refrigerate. reheat come dinnertime — via microwave, of course!!
