i’m always looking for something quick, easy and healthy.

most nights i stick to a veg diet (it’s cheaper & i don’t think its healthy to eat meat every day)

this is one of my favorite pastas to make on the fly. most of the ingredients i keep stocked. give it a try. its also delish when cold!

tomato, basil, & feta pasta

ingredients

  • 1/4 box of thin spaghetti (or any other variety)
  • 1/2 container grape tomatoes
  • bunch of basil leaves, sliced.
  • 1/4 cup pited, sliced kalamata olives
  • 1 tsp. minced garlic (one clove)
  • 1/4 c. crumbled feta
  • 1/4 cup olive oil
  • 5 Tbsp. balsamic vinegar
  • S&P
  • Parmesan (optional)

directions

bring to boil a medium pot of salted water. add pasta to the water once boiling. cook as directed on package. (i prefer my pasta done more than al dente)

meanwhile, slice tomatoes in half & place into a medium bowl. squeeze them lightly to release juices. add in garlic, olives, basil, feta, olive oil, balsamic, and S&P. let the mixture marinate while pasta cooks.

drain pasta & add to the tomato mixture. toss. sprinkle with parmesan if you would like. i do!

(this version i used a regular vine-ripened tomato & diced it!)
